California Rolls


Yield: make 4 rolls

Ingredients:


1 medium avocado
1 Japanese cucumber
4 Tokyo Sushinori
6 cups sushi rice
1 tablespoon toasted sesame seed
8 imitation crab-meat sticks
4 teaspoon mayonnaise

Directions:

  1. Peel avocado, cut into wedges and remove seed. Cut into 8 pieces or more.

  2. Cut cucumber into length equal size to Tokyo Sushinori. 7in. (18cm). Cut in half lengthwise, then cut lengthwise into quarters.

  3. Place rolling mat (maki-su) on work surface with shortest side closest; place nori sheet, shiny side
    down, on mat. With wet fingers/ spoon, press one-quarter of the rice evenly over nori, leaving 1-inch (2.5 cm) border on far side uncovered. Sprinkle ¼ toasted sesame seed over rice.

  4. Put 2 pieces of avocado, 1 cucumber stick, 2 crabmeat sticks, put 1 Tsp mayonnaise on crabmeat sticks as shown.

  5. Begin rolling by lifting mat and pressing ingredients in with fingers. Roll up firmly. squeezing to compress. Remove mat and unwrap plastic. With sharp wet knife, trim ends; cut into eight 1/2-inch (1 cm) thick slices.

  6. Repeat using all ingredients to make 4 rolls.
