Stir-fried ToFu with Mushrooms and Garlic Sauce


Yield: Serves 3 - 4

Ingredients:


1 pound firm tofu
1 cup mushrooms
an 8 ounce can bamboo shoots
2 tablespoons soy sauce
1 tablespoon black bean garlic sauce
1 teaspoon sugar
2 tablespoons olive oil


Directions:

  1. Cut the tofu into 1/2 inch cubes and set aside.

  2. Slice the mushrooms into quarters.

  3. Drain the canned bamboo shoots, running through water to get rid of a "tinny" taste.

  4. Mix the black bean garlic sauce, soy sauce and sugar together in a small bowl.

  5. Place a skillet or wok over high heat. When wok is ready, add the oil. Add the bamboo shoots and mushrooms, stirring, until they are heated through.

  6. Add the tofu and the black bean garlic sauce/soy sauce/sugar. Stir-fry until the ingredients are heated through. Serve hot.
