Green Tea Pancake


Yield: Serves 3 - 4

Ingredients:


2 cup flour,
2 eggs,
a pinch of salt
1 1/2 tablespoon sugar,
1/2 cup milk,
2 tablespoon melted butter,
1/2 cup green tea liquid or
1/2 tablespoon Dragon Well green tea leaves


Directions:

  1. Soak two tea bags in a cup of hot water for 10 mins, or place the tea in a bowl, boil the water and pour over the leaves. Cover the bowl and steep for 10 mins.

  2. Beat the eggs, add pinch of salt, mix sugar to eggs and gradually add flour.

  3. Add the milk and melted butter slowly.

  4. Add green tea liquid. The mixture will be quite thin.

  5. Medium heat butter-greased frying pan, drop 2 tablespoons of the mixture at a time, when it starts to thicken, flip over until it’s done.

  6. Serve with syrup, jam or fresh fruit.
